Area of origin: family owned groves located in the municipality of Senigallia (AN), Marche.
Variety: Raggia 100%.
Olive grove altitude: 70-150 meters on the sea level.
Collection period: months of October and November.
Method of Harvest: only by hand.
Extraction system: Mazzola oil mill, continuous cycle with a two-phase system, cold controlled atmosphere, within 4 hours of collection.
Filtration: filtration performed immediately after extraction.
Storage: in stainless steel tanks with inert gas at a controlled temperature of 16° c
Packaging: bottles of dark glass with anti filler cap 0.5 lt and 0.75 lt
Acidity:0,15-0,25%
N° of peroxide: 3-6 meq o 2/kg
Colour: green with golden highlights.

Area of origin: olive-groves in our farm located in the neighbourhood of Senigallia (Ancona), Marche region.
Variety of the olives: monocultivar Leccino.
Altitude of the olive-grove: 70-150 meters on the sea level.
Picking period: october-november.
Picking method: stripping by hand.
Pressing method: olive-press Mazzola, continuous cold cycle, within 3-6 hours from the collection.
Filtration: the filtration is carried out immediately after extraction.
Storage: in stainless steel containers at a controlled temperature of 16 °c.
Bottling: at the order, in dark glass bottles from 0.25 to 0.50 -0.75 and 1.0-liter and 5-liter cans.
Acidity: 0,20%
Quantity of peroxide: 5,4 meq o 2/kg.
Colour: intense green.
Aromatic – olfactory taste sensations: subtle hints of almond leaf, fluid enough in your mouth, confirms the olfactory sensations
revealing a spicy component more pronounced than the bitter one and keeping the tendency to sweetness, balanced.
Fruity: lightweight, typical of this variety of olive.

It matches with :
fish appetizers, cooked legumes, slightly seasoned cheeses, vegetables.
